Just the other day I decided to take it upon myself to do some research. I was curious as to what exactly was deemed the “healthiest vegetable”. Upon searching around, I ended up finding that everyone seemed to have a different answer to what they believed was the very healthiest vegetable. Some people said collard greens, some people said onions, others broccoli! It didn’t seem anyone could agree. I found this amusing, and ended up deciding, why choose just one when there are so many? We all can agree that they all have their benefits, and so for our article today here are ten amazing vegetables that you can eat to enhance your overall health and well being!

1. Collard Greens. A true southern treat, collard greens are wonderfully healthy. They are part of the cabbage family, which could be easily guessed from their deep green leafy structure, and pretty enough to be used in all sorts of culinary manner. Having been used in lots of anti-cancer research, they are thought to help reduce the risks of many different types of cancer. Their leaves contain selenium, sulforaphane, and diindolymethane. These are nutrients that have anti-cancer effects. This plant is also rich in beta-carotene, vitamin E, and calcium.

2. Onions. Onions may make you cry, but they’re not only flavorful, they’re also very nutritious as well. Onions have been shown to have incredible anti-tumor and anti-inflammatory properties, as well as containing an antioxidant called quercetin. This antioxidant is most active out of all other flavanoids, helping to fight off the damaging effects free radicals have upon your body.

3. Red Peppers. (Bell peppers) Bell peppers are gorgeous no matter what color they come in, and are commonly used not only for their great taste but also their colorful accents to food. Because of their large amounts of folic acid and vitamin B6, they have been shown to have great effect on reducing your risk for stroke and heart-related illness. As well as containing plenty of vitamins C and A. They also have tons of antioxidants, making them another veggie perfect for cutting down on free radical damage and the effects of aging.

4. Sweet Potatoes. First off, this vegetable comes to the table ready to battle those damaging free radicals with nearly double your daily recommended amount of beta-carotene and vitamin C, both of which are anti-oxidants. This is a wonderfully traditional food that can be served in numerous different forms to match any given occasion, and at the same time offer bountiful amounts of calcium, iron, fiber, and protein to keep you healthy and feeling great!

5. Broccoli. Besides being rich in vitamins A and C, broccoli has sulforaphane. Sulforaphane is really one of broccoli’s biggest secret weapons. – It’s an anti-cancer compound that really charges and stimulates your cells to create enzymes that help fight cancer. It’s an amazing anti-cancer food.

6. Carrots. All of our favorite cartoon rabbits must have had incredible vision. – After all, carrots are best known for their help in improving vision. They contain a lot of beta-carotene, which gets turned into vitamin A by our bodies. An insufficient amount of vitamin A is known to cause poor vision and by consuming more of this vitamin you can help to improve it. Vitamin K and a good source of fiber are even more great reasons to eat this tasty orange veggie.

7. Eggplants. Eggplants, eggplants, where to begin? Not only has the eggplant been shown to help with heart-health, its lovely purple skin is rich in antioxidants. It also contains plenty of vitamin B1, potassium, fiber, and copper. And to add to all these awesome health benefits, it’s very low in fat and calories, making it great for anyone watching their weight.

8. Spinach. Spinach is an incredible food, after all, where would Popeye have been without it? Unfortunately though, the whole “spinach will make you as strong as a super hero” line of thought is a complete myth. It originated from a false assumption about the iron content in spinach, and while it does have an above average amount of iron in it, it wont be able to give you super hero strength! Fortunately though, spinach has plenty of other amazing health benefits that definitely make it a great “super food”! It is very nutritionally dense, containing plenty of vitamins C, A and E, as well as magnesium! (And of course, plenty of iron!)

9. Celery. Celery is a really neat vegetable, as it can be used in anything from soups to snacks to party trays. It’s a great source of vitamins A and C, as well as potassium, calcium, and magnesium. It’s packed with a lot of nutrition, and extraordinarily low calorie, making it a great, healthy food for anyone watching their diet.

10. Asparagus. Asparagus is great for getting your fiber and vitamin B6, as well as potassium. It is also one of the few vegetables loaded up with vitamin E! Asparagus also has an antioxidant called rutin that helps to strengthen the walls of your capillaries, and glutathione, which is known to help immensely in fighting cancer.

We all want to live healthier, more fulfilling lives, and fortunately that can be as easy as tossing a few healthy veggies into your diet. Of course, while we’ll probably always have differing opinions on the “healthiest”, there’s no question that every one of these vegetables is great for you!
