High Fiber Holiday Menu: Tempting Healthy Recipes

A Dutch oven is a sort of large cast iron bowl with a cast iron lid, mostly used for camping. The main difference from most kitchen cooking is that you use only one cooking pot. I like to use only one pot for normal cooking recipes too, because I’m lazy.
Tasty Hash
1 lb sausage or bacon
2 lbs potatoes, chopped or chipped
1 dozen eggs
2 cups cheddar cheese, grated
Chop sausages or bacon into 1 inch bits (no need to measure them). Place oven in hot coals and fry them in their own fat, or add some coconut oil.
Add potatoes, put on the lid, and place hot coals on the lid. Mix eggs in a bowl or shaker and pour them over the meat and potatoes once the potatoes are cooked. Once the eggs are cooked, sprinkle on the cheese, and put the lid back on, with coals on the lid until the cheese has melted. That’s all there is to it.
Easy Taco Pie
24 oz minced beef
1 medium jar taco sauce
6 large tortillas
8 oz grated cheddar cheese
8 oz can tomato sauce
1 tablespoon coconut oil
If you are in a cold climate you can freeze your coconut oil into convenient tablespoon quantities, and it won’t melt until you get up to nearly 70F
Place oven in hot coals. Wipe inside with coconut oil until the bottom is lightly coated
Brown the mince, then remove it.
Put 3 tortillas in the bottom of the oven and cover them with half the mince and half the sauce. Cover with the remaining tortillas, and the remaining mince and sauce. Sprinkle on the cheese. Cover and place coals on top till cheese is melted.
The main thing to remember is that easy Dutch oven recipes are all about cooking in one pot.
